  • Postopek



  • 1. Obložite ali pripravite model za 55 g ploščico. Naj bo čist in suh. Če je model tog, ga rahlo ohladite 5 minut, da se obliv ob stiku enakomerno strdi.


  • 2. V majhni skledi zmešajte mešanico mlečnih beljakovin, kolagenski hidrolizat, sladila in sol. Temeljito premešajte, da se suhe sestavine popolnoma porazdelijo in ne ostanejo svetle sledi.


  • 3. Dodajte stopljeno olje palmovih jedrc, glicerol in arome. Z lopatico obdelujte mešanico 1 do 2 minuti, dokler se ne poveže v gladko, gosto pasto. Na koncu vmešajte sojine hrustljavčke, le toliko, da se enakomerno porazdelijo in ostanejo celi.


  • 4. Nadev trdno vtisnite v model v eni plasti. Z zadnjo stranjo žlice ali z lopatico ga stisnite, da bo površina ravna in masa povezana. Hladite 10 minut, dokler ni dovolj čvrst, da ga lahko vzamete iz modela brez deformacije.


  • 5. Obliv iz mlečne čokolade skupaj s kakavovim maslom stopite na nežni toploti, pri čemer naj mešanica ostane tekoča in sijoča. Mešajte, dokler ni popolnoma gladka in topla, ne vroča; obliv mora teči v tankem, enakomernem curku.
