  • Postupak



  • 1. Osušite file lososa papirnim ubrusom. Površina mora biti bez vlage kako bi se riba ravnomerno zapekla i kako bi se glazura ujednačeno uhvatila.


  • 2. Zagrejte ulje za kuvanje u tiganju za sotiranje na srednje jakoj vatri 1 minut, dok ulje ne počne da svetluca i slobodno se kreće po tiganju.


  • 3. Stavite lososa u tiganj stranom za prezentaciju nadole. Pecite 3 minuta bez pomeranja, dok donja strana ne dobije duboko zlatnu boju i ne počne lako da se odvaja od tiganja.


  • 4. Okrenite lososa i pecite 2 minuta sa druge strane. Meso treba da ostane jedva neprozirno po ivicama, a u sredini još blago prozirno.


  • 5. Dodajte aromatične sastojke i začine u tiganj i kratko ih promešajte u vrelom ulju 15 do 20 sekundi, samo dok ne zamirišu.


  • 6. Dodajte soja sos na hongkonški način i neprekidno ga kašikom prelivajte preko lososa 1 minut. Sos treba blago da se redukuje i obloži ribu sjajnim, koncentrovanim slojem.


  • 7. Sklonite tiganj sa vatre i ostavite lososa da odmori u glazuri 1 minut. Meso treba da se stabilizuje do sočnog, nežnog završetka sa delikatnim listanjem.

    Postavite lososa blago van centra na zagrejan tanjir i prelijte ga preostalom glazurom. Poslužite ga sa čistom ivicom i vidljivim sjajem, tako da sos uokviri ribu umesto da je prekrije.
