Ovo je slojeviti desert suzdržane elegancije i šarma: tanke švedske palačinke naslagane sa blago umućenom slatkom pavlakom, svetlim nadevom od jagoda i kiselkastom notom džema od brusnice. Ravnoteža zavisi od preciznosti, a ne od izdašnosti; svaki sloj mora ostati jasan i odvojen, kako bi se tårta sekla uredno i imala lagan, a ne težak ukus. Na kraju treba da bude hladna, podatna i tek toliko slatka da bobičasto voće ostane u prvom planu.

Postupak



  • 1. Stavite jednu švedsku palačinku na tanjir za serviranje ili stalak za tortu. Premažite površinu tankim, ravnomernim slojem umućene slatke pavlake, ostavljajući uzak rub od 5 mm. Sloj treba da bude gladak i podatam, ne toliko debeo da klizi.


  • 2. Dodajte drugu palačinku i ponovite sa umućenom slatkom pavlakom. Nastavite da ređate na ovaj način dok ne utrošite sve palačinke, ravnomerno raspoređujući slatku pavlaku tako da naslagani kolač ostane ravan i stabilan.


  • 3. Kada postavite poslednju palačinku, premažite preostalu umućenu slatku pavlaku preko vrha u urednom, ravnomernom sloju. Površina treba da bude glatka i blago zaobljena, sa uredno zadržanim ivicama.


  • 4. Kašikom nanesite nadev od jagoda preko vrha i nežno ga razmažite u ravnomeran sloj. Završite tako što ćete tačkasto naneti ili razmazati džem od brusnice preko površine u suzdržanom uzorku, tako da oba voćna elementa ostanu vidljiva i jasno odvojena.


  • 5. Ohladite sastavljenu tårta 15 minuta ako želite čvršće parče. Kolač treba da deluje stegnuto u sredini i da zadrži slojeve bez sabijanja pri sečenju.
