  • 土豆,去皮后切成 1.5 cm 方块:180 g


  • 做法


  • 1. 将煎锅置于中高火上,加热至完全热透,约 2 分钟。将牛肉单层放入锅中,不要翻动,煎 3 分钟,直到底面深度上色。翻面后再继续煎 2 分钟,直到牛肉形成结实的焦壳,表面不再生。


  • 2. 将土豆加入煎锅中,翻拌使其裹上释出的油脂和锅底焦香物。烹煮 12 至 14 分钟,每隔 2 分钟翻拌一次,直到土豆中心变得柔软,边缘呈金黄色并略微酥脆。


  • 3. 将火力调至中火,再继续烹煮 2 分钟,期间翻动一到两次,使牛肉保持多汁,同时让土豆获得最后均匀的色泽。成品应带有锅中汁液形成的光泽,牛肉完全熟透,土豆可被刀轻松切开。


  • 装盘与上桌


    将锅中内容转移到预热过的盘子或浅碗中。整理成紧实的小堆,同时让焦化的表面保持可见。立即上桌,此时土豆边缘仍然酥脆,牛肉热而多汁。
