  • 420 g heel inkvis, skoongemaak, lywe en tentakels geskei indien nodig

  • 18 g groente-olie

  • 8 g sout

  • Metode


  • 1. Berei die inkvis voor. Dep die inkvis heeltemal droog met kombuispapier. As die lywe groot is, sny hulle oop sodat hulle plat lê; laat kleiner lywe heel. Kerf die binnekant liggies in ’n vlak kruissnitpatroon indien verkies, en wees versigtig om nie heeltemal deur te sny nie. Geur eweredig met 8 g sout en 18 g groente-olie, en laat dan vir 5 minute staan.


  • 2. Maak die glasuur. Meng 24 g sojasous, 6 g suiker en 10 g groente-olie in ’n klein kastrol. Plaas oor lae hitte en roer vir 1 tot 2 minute, net totdat die suiker oplos en die glasuur glansend word. Moenie dit sterk laat inkook nie; dit moet vloeibaar en liggies stroperig bly.


  • 3. Ryg die inkvis op spiese. Ryg die inkvislywe en tentakels op die spiese sodat hulle plat en stewig lê. Hou die rangskikking eweredig sodat die inkvis teen dieselfde tempo oor elke spies gaar word.

  • 5. Voltooi. Verwyder die spiese sodra die inkvis net-net oral ondeursigtig is en steeds sag is om te byt. Die oppervlak moet op plekke liggies geskroei wees, met ’n glansende afwerking en geen droogheid aan die rande nie.
