  • Metode


  • 1. Kombineer die melkproteïen, kollageenhidrolisaat, gekapte grondboontjie, versoeter, sout en geurmiddel in ’n klein bak. Meng deeglik sodat die droë bestanddele eweredig versprei is en die grondboontjie deur die mengsel versprei is.

  • 2. Voeg die gliserol en gesmelte palmpitolie by. Werk die mengsel met ’n spatel totdat dit ’n samehangende, buigsame pasta word sonder enige droë kolle. Dit moet bymekaar hou wanneer dit gedruk word en effens elasties voel, nie krummelrig nie.

  • 3. Druk die mengsel stewig in ’n 55 g-stafievorm. Komprimeer dit in lae om lugruimtes uit te skakel en ’n digte, egalige binnekant te skep. Maak die oppervlak netjies gelyk.

  • 4. Verkoel vir 20 minute, of totdat die stafie ferm genoeg is om uit die vorm te haal sonder vervorming.

  • 5. Smelt die melksjokoladebedekking saam met die kakaobotter oor baie sagte hitte, en roer totdat dit glad en vloeibaar is. Die bedekking moet glansend en heeltemal gemeng wees, sonder sigbare korrels.

  • 6. Haal die stafie uit die vorm en bedek dit egalig met die gesmelte sjokolade. Laat die oortollige hoeveelheid kortliks afdrup, plaas dan die stafie op bakpapier. Verkoel vir 10 tot 15 minute, net totdat die bedekking heeltemal gestol en ferm om aan te raak is.


  • Opdien en bediening


    Bedien die stafie heel, met die sjokoladeskil ongeskonde en die oppervlak skoon. Die hap moet beweeg van ’n bros buitekant na ’n digte, gesoute grondboontjie-middel met ’n beheerde kou.
