  • Fremgangsmåde



  • 1. Kom sukker, glukosesirup og gelatine i gryden. Sæt den over den laveste varme, og rør konstant i 2 til 3 minutter, lige indtil blandingen bliver flydende og ensartet. Lad den ikke koge på dette trin; massen skal se blank ud og være helt opløst.


  • 2. Tag gryden af varmen. Rør citronsyre og kunstig aroma i, tilsæt derefter frugtfarven, og bland, indtil farven er jævn og tydeligt grøn. Blandingen skal forblive glat uden grynethed eller striber.


  • 3. Hæld blandingen gennem en finmasket si ned i det klargjorte formhulrum. Fyld op til i alt 4 g. Bank formen let én gang for at frigive eventuelle luftbobler. Overfladen skal sætte sig jævnt og ubrudt.


  • 4. Lad slikket sætte sig ved stuetemperatur i 12 til 15 minutter, indtil det er fast nok til at kunne tages rent ud af formen, men stadig smidigt i midten.


  • 5. Tag geléen ud af formen, og pensl eller overtræk overfladen let med carnaubavoks. Lad den stå i 2 minutter, og håndter den først, når finishen er tør og satinagtig.


  • Anretning og servering



    Server geléen alene på en lille afkølet tallerken eller i en enkelt konfektbakke. Den skal fremstå juvellignende, kompakt og upåklagelig med et poleret ydre og en blød, elastisk bid.
