  • Postupak



  • 1. Pripremite arome.

  • Narežite đumbir na vrlo tanke trakice. Češnjak narežite tanko. Odvojite bijeli dio mladog luka od zelenog i oba dijela sitno narežite. Držite arome odvojene kako bi ravnomjerno i čisto otpustile svoje mirise.

  • 2. Začinite ribu.

  • Posušite crvenog snappera tapkanjem i stavite ga na tanjur otporan na toplinu. Rasporedite đumbir, češnjak i bijeli dio mladog luka po ribi i oko nje. Pomiješajte sojin umak i šećer, zatim žlicom ravnomjerno prelijte ribu i tanjur. Površina treba biti lagano glazirana, ne preplavljena.

  • 3. Nježno kuhajte na pari.

  • Zakuhajte kuhalo na pari do stabilnog vrenja. Stavite tanjur unutra, poklopite i kuhajte na pari 7 do 8 minuta, ovisno o debljini. Riba je gotova kada meso postane neprozirno, odvaja se u čistim listićima na najdebljem dijelu i ostaje sočno i tek čvrsto.

  • 4. Zagrijte završno ulje.

  • Dok se riba kuha na pari, zagrijte biljno ulje u malom lončiću dok ne postane vruće i svjetlucavo, ali ne do točke dimljenja. Arome se ne smiju agresivno pržiti; ulje treba samo prenijeti toplinu i miris.

  • 5. Dovršite i prelijte.

  • Izvadite tanjur iz kuhala na pari. Pospite zeleni dio mladog luka po ribi, zatim ravnomjerno prelijte vruće ulje preko aroma i izloženog mesa. Površina treba kratko zacvrčati i zatim se smiriti u sjajan završetak. Poslužite odmah.
