  • Postupak



  • 1. Kratko isperite bijelu rižu pod hladnom vodom dok voda ne postane manje mutna. Dobro ocijedite. Pomiješajte rižu, vodu i sol u loncu, zakuhajte na jakoj vatri, zatim poklopite i smanjite na najnižu temperaturu. Kuhajte 12 minuta bez podizanja poklopca. Maknite s vatre i ostavite poklopljeno da odstoji 5 minuta. Zrna trebaju biti mekana, odvojena i suha na površini.


  • 2. Stavite zeleni grašak, vodu, sol i crni papar u malu tavu. Stavite na srednju vatru i kuhajte 3 do 4 minute, samo dok grašak ne bude vruć i svijetlozelen te dok tekućina ne ispari. Neka ostane odvojen; treba ostati čvrst, ne raskuhan.


  • 3. Lagano začinite panirani odrezak preostalom soli i crnim paprom. Zagrijte ulje za kuhanje u tavi na srednjoj vatri dok ne počne svjetlucati. Dodajte odrezak i pržite 3 do 4 minute sa svake strane, okrećući jednom, dok ne postane duboko zlatan i hrskav s obje strane, a sredina potpuno vruća. Prebacite na tanjur i ostavite da odstoji 1 minutu kako bi korica ostala netaknuta.


  • 4. Nježno rastresite rižu vilicom. Provjerite začinjenost graška i odreska, prilagođavajući samo ako je potrebno unutar već navedenih količina soli i papra. Završne komponente trebaju biti čisto začinjene, ne agresivne.

    Stavite rižu u uredan humak na jednu stranu tanjura. Položite grašak pokraj nje u zbijenoj liniji ili malom ovalu. Naslonite odrezak na rižu tako da hrskava površina ostane vidljiva. Poslužite odmah dok je korica vruća, a riža ostaje podatna.
