  • 180 g pohanog prženog pilećeg odreska

  • 20 g ulja za prženje

  • Postupak


  • 1. Isperite bijelu rižu u hladnoj vodi dok voda ne postane gotovo bistra. Dobro ocijedite. U loncu pomiješajte rižu sa 190 g vode i 2 g soli, poklopite i zakuhajte do ravnomjernog laganog vrenja na srednje jakoj vatri. Smanjite na najnižu temperaturu i kuhajte 12 minuta bez podizanja poklopca. Maknite s vatre i ostavite da odstoji, poklopljeno, 10 minuta. Zrna trebaju biti mekana, odvojena i suha na površini.


  • 2. Zakuhajte malu posudu vode, dodajte zeleni grašak i 2 g soli te kuhajte 2 do 3 minute, dok ne postane jarko zelen i tek omekša. Odmah ocijedite i držite toplim. Začinite s 3 g ulja za prženje i 0.5 g crnog papra.


  • 3. Zagrijte ulje za prženje u tavi na srednje jakoj vatri dok ne dosegne 175°C. Dodajte pohani prženi pileći odrezak i pržite 2 do 3 minute sa svake strane, ili dok korica ne postane tamnozlatna i izrazito hrskava. Prebacite na pladanj obložen papirom, odmah začinite s 2 g soli i 1 g crnog papra te ostavite da odstoji 2 minute. Korica treba ostati suha, a unutrašnjost vruća u cijelosti.


  • 4. Rahlo razdvojite rižu vilicom i po potrebi lagano začinite preostala 2 g soli. Zrna trebaju ostati cijela i ravnomjerno začinjena.

    Oblikujte rižu u uredan humak na jednoj strani tanjura. Uz nju složite grašak u kompaktnu liniju. Postavite odrezak tako da se lagano naslanja na rižu kako bi korica ostala vidljiva i neoštećena. Poslužite odmah, dok je odrezak hrskav, a riža topla i podatna.
