  • 1. Stavite sushi rižu u malu zdjelu i nježno je rastresite lopaticom za rižu tako da zrna ostanu cijela i lagano sjajna. Držite je na sobnoj temperaturi; treba biti podatna, ne vruća.


  • 2. U zasebnoj zdjeli pomiješajte mljevenu tunu, majonezu i mladi luk. Lagano preklapajte samo dok se tuna blago ne poveže i smjesa ne izgleda ravnomjerno začinjeno. Smjesa treba mekano držati zajedno bez da postane kašasta.


  • 3. Narežite nori na male pravokutnike ili kvadrate prikladne za zalogaje ručnih rolica. Držite komade suhima i hrskavima do posljednjeg trenutka.


  • 4. Podijelite rižu na male porcije i svaku lagano pritisnite u kompaktan oval ili niski humak. Riža treba zadržati oblik, a pritom ostati podatna na rubovima.


  • 5. Stavite malu količinu smjese od tune na svaki komad norija, a zatim odozgo dodajte urednu porciju morskog ježinca. Nadjev neka ostane centriran i odmjeren kako bi se nori mogao uredno presaviti ili omotati bez pucanja.
