  • 2. Batatam dulcem torra. Torre per 20 ad 25 minuta, semel medio tempore versa. Cubi in medio teneri esse debent, ad margines leviter brunnei, et superficiem siccam caramelizatam ferre sine collatione.


  • 3. Pullum condi. Pectus pulli sicca. Reliquis 2 g salis et 0.5 g piperis nigri aequaliter condi.


  • 4. Pullum assa. Sartaginem craticulatam aut sartaginem super ignem medium-altum calefac. Reliqua 4 g olei olivae adde. Pullum coque per 5 ad 6 minuta in utraque parte, pro crassitudine, donec exterior pars bene colorata sit et medium ad 74°C perveniat. Per 5 minuta quiescere sine antequam secetur; caro sucosa et firma manere debet, non fibrosa.
