  • 2. Kekalkan renihan lembut selama 18 hingga 22 minit, kacau sekali-sekala untuk mengelakkan reduksi tidak sekata. Wain sepatutnya kehilangan rasa alkohol mentahnya, menjadi lebih gelap warnanya, dan berkilat.

  • 3. Reduksi sehingga cecair itu seberat 35 g pada penimbang digital. Pada tahap ini, ia sepatutnya menyaluti sudu dengan nipis dan meninggalkan jejak bersih apabila sudu ditarik melaluinya.
