  • Stek bahu babi, 520 g

  • Halia segar, dikupas dan diparut halus, 20 g


  • Kaedah


  • 1. Tepuk stek bahu babi hingga kering dengan tuala kertas. Pangkas hanya lebihan lapisan permukaan yang longgar jika perlu; kekalkan lemak dan urat semula jadinya. Parut halia hingga halus dan ketepikan.

  • 2. Letakkan daging babi di atas papan dan tekan halia parut secara sekata pada kedua-dua belah, dengan menumpukannya pada bahagian daging berbanding lemak. Biarkan selama 10 minit supaya halia mula mewangikan permukaan.

  • 3. Letakkan kuali berat di atas api sederhana tinggi dan biarkan ia menjadi betul-betul panas, 2 hingga 3 minit. Susun stek babi dalam satu lapisan dan perang-garingkan selama 4 minit tanpa mengalihkannya, sehingga bahagian bawahnya menjadi perang gelap dan terangkat dengan bersih.

  • 4. Balikkan stek dan masak bahagian kedua selama 4 minit. Kecilkan api kepada sederhana dan teruskan memasak selama 8 hingga 12 minit, membalikkannya sekali atau dua kali, sehingga bahagian luar berwarna mahogani dan bahagian dalam mencapai 68°C untuk daging yang berjus dan mudah dihiris.

  • 5. Rehatkan daging babi di atas pinggan suam selama 5 minit. Isinya sepatutnya terasa pejal tetapi masih anjal, dengan jus yang jernih dan nota halia yang harum pada permukaan.

  • 6. Hiris stek melawan urat menjadi kepingan tebal, atau hidangkan seekor jika lebih disukai. Cedok sebarang jus dari kuali ke atas daging sebelum dihidang.

    Susun daging babi dalam satu garisan kemas atau sedikit bertindih di atas pinggan suam. Kekalkan persembahan yang sederhana, membiarkan permukaan perang dan kilauan halia pucat kelihatan jelas. Hidangkan segera sementara bahagian luar kekal rangup dan bahagian tengah kekal berjus.
