Uvod


Hamburger uspe le, kadar je vsak element natančno pripravljen: govedina začinjena s toploto, bombetka ogreta do mehkobe, zelenjava pa ostane sveža in čista. Ta različica ohranja poštenost klasične oblike, hkrati pa izpopolni njeno ravnovesje, tako da meso ostane v središču, dodatki pa prispevajo svežino namesto teže.   • 2. Pogrejte bombetko. Bombetko za hamburger prerežite in položite prerezani strani v suho ponev na srednji temperaturi za 1 do 2 minuti, le toliko, da se rahlo opečeta in sta topli na dotik. Sredica mora ostati mehka, medtem ko prerezana površina dobi rahlo zlato barvo.


  • 3. Specite govejo polpeto. Ponev segrejte na srednje visoko temperaturo. Govejo polpeto položite v ponev in pecite 3 do 4 minute na prvi strani, nato jo obrnite in pecite še 2 do 3 minute na drugi strani. Zunanjost mora biti lepo zapečena, sredica prepečena, polpeta pa ob rahlem pritisku še vedno sočna.


  • 4. Sestavite hamburger. Spodnjo polovico bombetke položite na krožnik. Dodajte solato, nato paradižnik, nato čebulo. Na vrh položite vročo govejo polpeto, da toplota rahlo zmehča zelenjavo pod njo. Zaključite z zgornjo polovico bombetke.
