    Pečen sladki krompir


  • 180 g sladkega krompirja, olupljenega in narezanega na enakomerne 2 cm velike kocke


  • Losos


  • 140 g fileja lososa, po potrebi brez kože


  • Bananino-avokadova krema


  • 40 g banane, olupljene

  • 50 g avokada, olupljenega in brez koščice


  • Postopek


  • 1. Pečico segrejte na 200°C. Pekač obložite in sladki krompir razporedite v eni plasti. Pecite 20 do 25 minut, na polovici časa enkrat obrnite, dokler robovi rahlo ne karamelizirajo, sredica pa ni mehka brez trdega jedra.


  • 2. Medtem ko se sladki krompir peče, pripravite bananino-avokadovo kremo. Banano in avokado dajte v mešalnik ali kuhinjski sekljalnik ter mešajte, dokler zmes ni popolnoma gladka, svetla in dovolj gosta, da obdrži mehak trak. Tekstura mora biti kremasta, ne zračna ali redka.


  • 3. Lososa po želji rahlo posolite, nato ga položite v majhno kozico z ravno toliko vode, da sega do polovice višine fileja. Na srednji temperaturi vodo segrejte do komaj opaznega vrenja, nato zmanjšajte na nizko temperaturo in poširajte 6 do 8 minut, odvisno od debeline, dokler meso ne postane neprosojno in se ne loči na sočne kosmiče, pri čemer ravno izgine prosojna sredica.


  • 4. Lososa previdno vzemite iz vode in ga na kratko odcedite. Površina mora ostati sijoča in nepoškodovana, ne razpadla ali suha.


  • 5. Pečen sladki krompir razporedite na dno tople sklede. Lososa položite ob stran v čistih, velikodušnih kosih. Bananino-avokadovo kremo naložite z žlico v gladkem loku ali v obliki quenelle ob ribo, tako da vsak sestavni del ostane razločen.


  • Serviranje


    Postrezite takoj, ko je sladki krompir še topel in losos ostane mehak. Krožnik naj uravnoteži toplino, mehkobo in bogatost, krema pa naj prispeva hladen, čist kontrast.
