  • Postopek



  • 1. Po potrebi model obložite s papirjem za peko in ga postavite na pladenj, ki se ravno prilega v hladilnik. Tako bo ploščica ostala kompaktna in se bo lepo sprostila iz modela.


  • 2. V majhni skledi zmešajte mešanico mlečnih beljakovin, kolagenski hidrolizat, maltitol, sukralozo, kakav v prahu in sol. Temeljito mešajte 30 sekund, dokler se suhe sestavine enakomerno ne porazdelijo in ne ostanejo več sledi.


  • 3. Dodajte glicerol, stopljeno olje palmovih jedrc in naravne arome. Z lopatico obdelujte mešanico 1 do 2 minuti, dokler ne nastane gosta, enotna pasta. Biti mora voljna, rahlo lepljiva in gladka, ne drobljiva.


  • 4. Sojine hrustljavčke nežno vmešajte z minimalno obdelavo, le toliko, da se enakomerno porazdelijo. Masa mora ohraniti vidno hrustljavo strukturo, ne da bi se sesedla.


  • 5. Mešanico čvrsto vtisnite v model v eni enakomerni plasti in jo z lopatico stisnite, da ne ostanejo praznine. Hladite 20 minut, dokler jedro ni dovolj čvrsto, da ohrani obliko.


  • 6. Obliv iz mlečne čokolade skupaj s kakavovim maslom stopite na nežni toploti in mešajte, dokler ni popolnoma tekoč in sijoč. Temperaturo ohranjajte pod nadzorom, da ostane obliv gladek in dovolj tanek za enakomerno prekrivanje ploščice.


  • 7. Ohlajeno ploščico vzemite iz modela in jo položite na papir za peko. Popolnoma jo oblijte s čokoladnim oblivom in delajte hitro, da ostane ovoj enakomeren in nepoškodovan. Pustite, da odvečni obliv odteče, nato ploščico odložite na papir za peko.
