Uvod



To je sestavljena pečena jed čistih linij in umirjenega bogastva: losos v ravnovesju s kislino paradižnika, zeleno svežino špinače in nežno strukturo ovsa. Sir poveže jed v skladen gratin, ne da bi preglasil ribo. Ob pravilni postrežbi je nasitna, natančna in uravnotežena.

Paradižnik, zrel, narezan na kocke: 100 g

Ovesni kosmiči: 60 g
Sir, drobno nariban: 50 g

Postopek



  • 1. Pečico segrejte na 190°C. Pekač med pripravo sestavin rahlo ogrejte v pečici; vroča posoda pomaga, da se jed ob robovih enakomerno utrdi.


  • 2. Ovsene kosmiče dajte v majhno kozico s 120 g vode. Na srednji temperaturi jih nežno zavrite in kuhajte 4 do 5 minut, pogosto mešajte, dokler kosmiči ne vpijejo vode in ne tvorijo goste osnove, ki jo lahko zajemate z žlico. Odstavite z ognja.


  • 3. V vroče ovsene kosmiče dodajte špinačo in mešajte 30 do 45 sekund, le toliko, da oveni in postane sijoča. Vmešajte paradižnik in na kratko premešajte, da se enakomerno porazdeli, ne da bi povsem razpadel.


  • 4. Ovseno mešanico naložite v topel pekač in jo poravnajte s hrbtno stranjo žlice. Na vrh položite lososa v enem kosu. Začimb tukaj ne dodajajte; okus jedi naj ostane čist in neposreden.


  • 5. Sir enakomerno potresite po lososu in po vidni površini ovsene mešanice. Pecite 18 do 20 minut, dokler se sir ne stopi in mestoma rahlo zapeče, paradižnik ob robovih ne brbota, losos pa ni neprosojen do sredine, z le rahlo prosojnostjo na najdebelejšem delu.


  • 6. Vzemite iz pečice in pustite počivati 3 minute. Pečena jed se mora ustaliti v čvrsto, povezano teksturo, ki jo je mogoče rezati, ne pa ostati kot rahla narastekasta zmes.


  • Serviranje in postrežba



    Postrezite neposredno iz pekača ali prenesite na topel krožnik v enem čistem kosu, tako da losos leži na ovseni osnovi. Končna jed mora delovati plastovito in sestavljeno: sočna riba, zmehčan paradižnik, nežna špinača in kompaktna ovsena podlaga, povezana s tanko zlato sirno skorjico.

    Uporabite zrel paradižnik z dovolj kisline, da uravnoteži bogatost lososa in sira. Ovseni kosmiči morajo biti kuhani pred peko; po peki ne smejo ostati suhi ali zrnati. Lososa ne pecite predolgo, saj mora njegova tekstura ostati voljna in ravno prav pečena.
