Uvod


To je osnovna sirova pica v svoji najčistejši obliki: voljno testo, zadržana paradižnikova omaka ter uravnotežena plast mocarele in parmezana.   • Postopek



  • 1. Pečico segrejte na 250°C in vanjo za 10 minut postavite pekač za pico ali pekač, da se segreje. Pekač mora biti dovolj vroč, da omogoči hitro utrditev dna in hrustljavo podlago.


  • 2. Delovno površino rahlo pomokajte z gladko moko. Na površino položite testo za pico, ga posolite in enakomerno razvaljajte v krog s premerom približno 30 cm, pri čemer naj bo sredina nekoliko tanjša od roba.


  • 3. Testo prenesite na vroč pekač. Delajte hitro, da testo ostane voljno in ga je lahko oblikovati.


  • 4. Paradižnikovo omako razporedite po testu v tanki, enakomerni plasti, pri čemer ob robu pustite 1 cm prostega roba. Površina naj bo prekrita, ne premočena.


  • 5. Mocarelo enakomerno razporedite po omaki, nato zaključite s parmezanom. Po vrhu v tankem, enakomernem curku pokapajte oljčno olje.


  • 6. Pecite 10 do 12 minut, dokler skorja na robu ne postane zlato rjava, dno ni pečeno in se sir popolnoma ne stopi z rahlo zapečenimi mesti. Sredina mora ostati mehka, vendar ne več surova.


  • 7. Pico vzemite iz pečice in jo pred rezanjem pustite počivati na pekaču 2 minuti. Tako se sir ustali in kosi ostanejo lepo oblikovani.


  • Serviranje


    Pico postrezite celo ali narezano na 6 enakomernih kosov. Postrezite jo na ogreti deski ali pladnju, z nepoškodovanim robom in sirom, enakomerno razporejenim do roba omake. Končna pica mora biti uravnotežena: hrustljava po obodu, voljna v sredini in vseskozi prijetno slana.
