  • Metode


  • 1. Voer die vorm of stafieholte met bakpapier uit indien nodig en plaas dit op 'n klein skinkbord. Hou die werkoppervlak droog; vog sal die finale tekstuur dof maak.

  • 2. Meng die melkproteïenmengsel, oplosbare mielievesel, isomalto-oligosakkariede, gekapte amandels, seesout en versoeters in 'n bak. Meng deeglik sodat die droë bestanddele eweredig versprei is en die amandels nie saamklonter nie.

  • 3. Plaas die kakaobotter en sonneblomolie in 'n klein kastrol oor baie lae hitte. Verhit net totdat die kakaobotter heeltemal gesmelt is en die mengsel helder is, ongeveer 2 tot 3 minute. Moenie toelaat dat dit rook nie.

  • 8. Ontvorm versigtig. Die voltooide stafie moet kompak wees, plek-plek glansend, en bros met die byt, met 'n romerige binnekant en 'n skoon sout nasmaak.


  • Opdien en bediening


    Bedien die stafie heel op 'n klein, eenvoudige bord of 'n plank met bakpapier uitgevoer. Bied dit aan met 'n enkele skoon snit indien die binneste struktuur gewys moet word; die dwarsdeursnee moet dig, egalig en doelbewus voorkom. Die balans moet eers as romerig lees, dan bros, sonder enige sigbare verbrokkeling.
