Hier kom sagte pannekoeke, bros spek, behoorlik gestolde gebakte eiers en bruingebakte ontbytwors saam in ’n skoon balans van soetheid, sout en vet. Die resultaat is bekend in vorm, maar noukeurig in uitvoering.

  • Metode



  • 1. Plaas die spek en ontbytwors vir 10 minute by kamertemperatuur terwyl jy die pan voorberei. Dit bevorder egalige gaarmaak en voorkom dat die buitekant te bruin word voordat die middel heeltemal deurwarm is.


  • 2. Verhit die swaar pan of bakplaat oor medium hitte. Voeg die spek by en kook vir 6 tot 8 minute, draai soos nodig, totdat die vet uitgelaat is en die spek diep bruin is met bros rande. Plaas oor na ’n warm bord.


  • 3. In dieselfde pan, kook die ontbytwors oor medium hitte vir 8 tot 10 minute, draai gereeld, totdat dit egalig bruin aan die buitekant is en ferm voel om aan te raak. Die middel moet heeltemal warm wees en die oppervlak goed gekaramelliseer. Plaas dit langs die spek.


  • 4. Verhit die kleefvrye pan oor medium-lae hitte en voeg die kookolie by. Breek die eiers daarin en braai vir 3 tot 4 minute, skep indien nodig liggies van die warm olie oor, totdat die wittes heeltemal gestol is en die eiergele sag bly maar hul vorm behou. Geur met die sout en swartpeper.


  • 5. Verhit die pannekoeke in die pan oor lae hitte vir 1 tot 2 minute, net totdat dit deurwarm en soepel is. Voeg die botter by en laat dit oor die pannekoeke smelt sodat die oppervlak glansend en liggies verryk word.


  • 6. Rangskik die pannekoeke op die bord, stapel dit netjies, en skep die pannekoekstroop bo-oor sodat dit net effens teen die kante afloop. Die pannekoeke moet sigbaar en netjies bly, nie deurdrenk nie.


  • Uitplating en bediening



    Plaas die eiers aan die een kant van die bord, met die spek en wors in ’n netjiese lyn langsaan gerangskik. Plaas die pannekoeke oorkant, sodat die soet en sout elemente met die eerste oogopslag duidelik onderskei kan word. Bedien onmiddellik terwyl die eiers sag is, die spek bros is en die pannekoeke warm is.
