  • 18 g mælkeprotein

  • 6 g kollagenhydrolysat

  • 6 g sødemiddel

  • 5 g cashew, finthakket

  • 5 g kakaosmør

  • 4 g sødmælkspulver

  • 4 g palmekerneolie

  • 3 g soy crisp

  • 1 g karamelaroma

  • 2 g glycerol

  • 0.5 g salt

  • 0.5 g emulgator


  • Fremgangsmåde


  • 1. Beklæd formen, og stil den til side. Hvis formen er stiv, så varm den let op, så den færdige bar slipper rent.

  • 2. Bland mælkeprotein, kollagenhydrolysat, sødemiddel, sødmælkspulver og salt i en skål. Sigt om nødvendigt for at fjerne sammenpressede partikler; blandingen skal forblive fin og ensartet.

  • 3. Smelt kakaosmør og palmekerneolie sammen i en lille gryde ved lav varme, kun indtil det hele er helt flydende og klart, cirka 2 til 3 minutter. Lad ikke fedtstofferne blive overophedede.

  • 4. Tag gryden af varmen, og rør emulgator, glycerol og karamelaroma i, til blandingen er glat og blank.

  • 5. Tilsæt den tørre blanding til den varme fedtblanding, og rør med spatlen, indtil der dannes en tæt pasta, cirka 1 minut. Massen skal se sammenhængende og let satinagtig ud uden tørre lommer.

  • 6. Vend cashew og soy crisp i. Bland kun, til det er jævnt fordelt; teksturen skal forblive tydelig, ikke knust.

  • 7. Tryk blandingen fast ned i den klargjorte form, og komprimer den i lag, så overfladen er jævn, og hjørnerne er tætte. Baren skal føles kompakt og samlet.

  • 8. Afkøl i 10 minutter, eller indtil den har sat sig nok til at kunne tages rent ud af formen. Den færdige bar skal være fast, glat og kunne skæres med en ren kant.


  • Anretning og servering


    Tag baren ud af formen, og server den hel, med overfladen holdt pæn og ubrudt. Server ved kølig stuetemperatur, så karamelnoten åbner sig, og teksturen forbliver fast, men ikke sprød.

    En præcis balance mellem varm fedt og tørre proteiner er afgørende; hvis blandingen er for varm, vil baren sætte sig fedtet i stedet for rent. Pres med beslutsomhed, ikke kraft, for at undgå en revnet overflade. Cashew og soy crisp skal forblive mærkbare og give kontrast til den glatte, kompakte base.
