  • 120 g basmati riže

  • 2 g soli

  • 80 g šunke, narezane na kockice od 5 mm

  • 8 g biljnog ulja

  • 1 g crnog papra

  • Postupak


  • 1. Isperite basmati rižu u nekoliko voda dok voda ne postane gotovo bistra. Dobro ocijedite u cjedilu 2 minute. Time se uklanja višak površinskog škroba i čuvaju odvojena zrna.

  • 2. U loncu pomiješajte rižu, 2 g soli i 260 g vode. Zakuhajte lagano na srednje jakoj vatri, zatim odmah poklopite i smanjite na najslabiju vatru. Kuhajte 12 minuta bez podizanja poklopca.

  • 3. Maknite lonac s vatre i ostavite, poklopljeno, da odstoji 8 minuta. Zrna trebaju biti mekana, odvojena i potpuno hidratizirana, bez vidljive vode u loncu.

  • 4. Dok riža odstoji, zagrijte biljno ulje u tavi na srednje jakoj vatri. Dodajte kockice šunke i pecite 4 do 5 minuta, povremeno miješajući, dok rubovi ne posmeđe i lagano postanu hrskavi.

  • 5. Začinite šunku s 1 g soli i 1 g crnog papra. Miješajte 15 sekundi da se ravnomjerno obloži, zatim maknite s vatre.

  • 6. Rižu nježno rastresite vilicom, zatim umiješajte šunku i sav sok iz tave. Miješajte samo dok se ravnomjerno ne rasporedi; zrna moraju ostati cijela i odvojena.
