  • Postupak


  • 1. Stavite vodu, smeđi šećer, cimet i kardamom u lonac. Stavite na srednju vatru i miješajte samo dok se šećer ne otopi, oko 1 minute. Tekućina treba postati mirisna i blago obojena, bez vidljivih kristala.

  • 2. Najprije dodajte kriške kruške, zatim kriške jabuke. Zakuhajte do vrlo laganog vrenja, zatim smanjite vatru na nisku. Poklopite poklopcem ili kartušem od papira za pečenje i poširajte 10 do 12 minuta, jednom okrećući voće na polovici vremena. Voće treba biti mekano po rubovima, ali i dalje zadržati oblik.

  • 3. Otkrijte i nastavite kuhati još 2 do 4 minute, dopuštajući da se sirup lagano reducira i obloži voće sjajnim slojem. Voće treba biti potpuno mekano, ali se ne smije raspadati, a sirup treba lagano prianjati uz žlicu.

  • 4. Maknite lonac s vatre i dodajte maslac. Lagano zavrtite lonac ili promiješajte dok se maslac potpuno ne emulgira u sirup i umak ne postane gladak i svilenkast, oko 30 sekundi.

  • 5. Ostavite voće da odstoji u toplom sirupu 2 minute prije posluživanja na tanjuru. Tako se okus stabilizira, a glazura ravnomjerno slegne po voću.

    Složite kriške kruške i jabuke uredno u zdjelicu za posluživanje ili plitki tanjur. Žlicom prelijte topli začinjeni sirup preko i oko voća, ostavljajući kriške vidljivima i lagano glaziranima. Poslužite toplo, tako da voće bude mekano, a umak sjajan, ali ne težak.
