  • 크림 45 g

  • 설탕 20 g

  • 코코아 파우더 10 g

  • 달걀노른자 20 g

    만드는 방법


  • 1. 작은 소스팬에 우유, 크림, 설탕, 코코아, 바닐라를 넣고 매끈해질 때까지 거품기로 섞습니다.

  • 2. 중불에서 김이 올라올 때까지 데우되, 끓이지는 마세요.

  • 3. 볼에 달걀노른자를 넣고 가볍게 풀어줍니다.

  • 4. 뜨거운 코코아 혼합물을 거품기로 계속 저으면서 노른자에 천천히 부어 템퍼링합니다.

  • 5. 혼합물을 다시 소스팬에 붓고 약불에서 계속 저어가며 숟가락 뒷면에 코팅될 정도로 걸쭉해질 때까지 익힙니다.
