  • 1. Tepuk filet salmon hingga kering dengan tuala kertas. Permukaannya mesti bebas daripada kelembapan supaya ikan dapat dipanggang dengan kemas dan glas melekat sekata.


  • 2. Panaskan minyak masak dalam kuali sauté di atas api sederhana tinggi selama 1 minit, sehingga minyak berkilau dan bergerak bebas di seluruh permukaan kuali.


  • 3. Letakkan salmon ke dalam kuali dengan bahagian persembahan menghadap ke bawah. Masak selama 3 minit tanpa menggerakkannya, sehingga bahagian bawahnya menjadi keemasan pekat dan terlepas bersih daripada kuali.


  • 4. Balikkan salmon dan masak selama 2 minit pada bahagian kedua. Isinya harus kekal baru legap di bahagian tepi dan masih sedikit lut cahaya di bahagian tengah.


  • 5. Masukkan bahan aromatik dan perasa ke dalam kuali dan kacau sebentar dalam minyak panas selama 15 hingga 20 saat, hanya sehingga naik harum.


  • 6. Masukkan sos berasaskan kicap gaya Hong Kong dan sudukan sos itu ke atas salmon secara berterusan selama 1 minit. Sos itu harus sedikit berkurang dan menyelaputi ikan dengan lapisan berkilat yang pekat.


  • 7. Alihkan kuali daripada api dan biarkan salmon berehat dalam glas selama 1 minit. Isinya harus menjadi lembap dan lembut dengan serpihan yang halus.
