  • Postopek



  • 1. V majhni posodi zmešajte mlečne beljakovine, kolagenski hidrolizat, sesekljane arašide, polidekstrozo, sladilo maltitol in sol. Temeljito premešajte, da se suhe sestavine enakomerno porazdelijo in da so arašidi razpršeni po celotni mešanici.


  • 2. Dodajte vlažilec glicerol in mešanico obdelujte z žlico, nato pa s čistimi rokami 2 do 3 minute. Masa mora postati povezana, rahlo prožna in se ob pritisku držati skupaj, ne da bi se drobila.


  • 3. Mešanico trdno vtisnite v model za 55 g ploščico in jo plast za plastjo stisnite, da odstranite zračne žepe. Površino poravnajte s hrbtno stranjo žlice ali kotno spatulo, da bo vrh raven in robovi čisti.


  • 4. Model hladite 20 minut oziroma dokler ploščica ni dovolj čvrsta, da jo lahko vzamete iz modela brez deformacije.


  • 5. Mlečno čokoladno prevleko skupaj s kakavovim maslom in oljem palmovih jedrc stopite v toplotno odporni posodi, postavljeni nad kozico z komaj vrelo vodo, in mešajte, dokler ni zmes gladka in popolnoma tekoča. Odstavite z ognja in pustite prevleko stati 1 minuto, da ostane sijoča, vendar ne vroča.
