  • 180 g govejega hrbta, očiščenega in narezanega na 20 g kocke


  • Krompir


  • 180 g krompirja, olupljenega in narezanega na 15 g kocke

  • 10 g masla ali olja

  • 50 g čebule, olupljene in drobno narezane na kocke

  • 10 g masla ali olja

  • Postopek



  • 1. Krompir dajte v kozico, prelijte s hladno vodo in na srednjem ognju segrejte do rahlega vretja. Kuhajte 6 do 8 minut, le toliko, da se robovi zmehčajo, kocke pa ostanejo cele. Dobro odcedite in razporedite na pladenj, da se 5 minut osuši v pari.


  • 2. V ponvi na srednje močnem ognju segrejte 10 g masla ali olja. Dodajte krompir v eni plasti in ga pecite 8 do 10 minut, občasno obrnite, da postane enakomerno zlato rjav in hrustljav na zunaj. Preložite na topel krožnik in po želji rahlo začinite, če to dopušča ravnovesje jedi; krompir mora ostati suh in jasno izoblikovan.


  • 3. V isto ponev dodajte preostalih 10 g masla ali olja. Dodajte čebulo in jo na srednjem ognju kuhajte 6 do 8 minut, pogosto mešajte, dokler ni mehka, prosojna in na robovih rahlo zlata, ne da bi močno porjavela. Preložite v manjšo skledo.


  • 4. Povečajte ogenj na visoko stopnjo. V vročo ponev dodajte kocke govejega hrbta in jih pecite 2 do 3 minute, obračajte, da se obarvajo po vseh straneh. Meso mora biti zunaj močno zapečeno, znotraj pa še vedno mehko, s toplim rdečim središčem, če ga postrežete na klasičen način. Takoj odstranite iz ponve in pustite na kratko počivati, medtem ko sestavite krožnik.


  • 5. V rumenjak vmešajte gorčico, da zmes postane gladka in enotna. Naj ostane gosta in sijoča; rahlo mora prekriti hrbtno stran žlice in ostati nekuhana.

    Krompir razporedite v urejen kupček, poleg položite govedino, čebulo pa dodajte v ločenem, urejenem delu. Mešanico rumenjaka in gorčice postrezite ob strani ali jo pri mizi dodajte čez govedino, da jed ostane skladna in vsak element ohrani svoj značaj.

    Pred cvrtjem naj bo krompir suh; površinska vlaga preprečuje pravilno obarvanje. Govedino pecite v zelo vroči ponvi in je ne natlačite preveč, sicer se bo meso parilo namesto zapeklo.
