  • 35 g olja za cvrtje

  • Postopek


  • 1. Riž dajte v lonec z 90 g vode in 1 g soli. Na srednji temperaturi ga nežno zavrite, nato pokrijte in zmanjšajte temperaturo na najnižjo stopnjo. Kuhajte 12 minut, ne da bi dvignili pokrov. Odstavite z ognja in pustite počivati, pokrito, 5 minut; zrna morajo biti mehka, ločena in na površini suha.

  • 2. V drugem manjšem loncu zavrite vodo. Dodajte grah in preostali 1 g soli. Kuhajte 2 minuti, le toliko, da ostane svetlo zelen in se povsem segreje. Takoj odcedite in začinite z 0.5 g črnega popra.

  • 3. V težki ponvi na srednji temperaturi segrejte olje za cvrtje na 175°C. Olje mora rahlo valovati in se prosto premikati, ne da bi se kadilo.

  • 4. Dodajte panirani svinjski zrezek in ga cvrite 3 do 4 minute na prvi strani, nato ga obrnite in cvrite še 2 do 3 minute na drugi strani. Skorjica mora biti temno zlata in čvrsta, notranja temperatura pa mora doseči 63°C. Preložite na papirnate brisače in takoj začinite s preostalimi 0.5 g črnega popra.

  • 5. Riž nežno razrahljajte z vilicami. Poskusite in po potrebi prilagodite okus le z majhnim ščepcem prihranjene soli s seznama sestavin, pri tem pa ohranite ločena zrna.

  • 6. Riž in grah rahlo zmešajte, ne da bi zmečkali grah. Mešanica mora ostati rahla, ne zbita.

    Riž in grah oblikujte v urejen kupček, rahlo izven sredine krožnika. Zrezek naslonite nanj, da skorjica ostane izpostavljena in hrustljava. Postrezite takoj, ko je zrezek še vroč in riž še vedno mehak.
