  • Postopek



  • 1. Mleto govedino dajte v majhno kozico ali ponev na srednji temperaturi. Pecite 6 do 8 minut in jo med peko z lopatico drobno razdrobite, dokler meso ni povsem zapečeno in ne ostane nič rožnatega. Tekstura mora biti drobljiva, sočna in rahlo obdana z izločeno maščobo, ne pa mokra.


  • 2. Pšenično tortiljo segrejte v suhi ponvi na srednji temperaturi 20 do 30 sekund na vsaki strani, le toliko, da postane prožna in rahlo zapečena. Ostati mora upogljiva, z nežno aromo popečenega.


  • 3. Tortiljo položite plosko na delovno površino. Po sredini enakomerno potresite cheddar in Monterey Jack, pri tem pa pustite čist rob za prepogibanje. Vročo govedino naložite po siru v ozki liniji, nato zaključite s salso. Nadev mora biti zbran in urejen, ne razmazan do robov.


  • 4. Strani prepognite navznoter, nato pa tesno zvijte od spodaj navzgor, da oblikujete kompakten zavitek. Vrnite ga v ponev s spojem navzdol na srednjo temperaturo in pecite 1 do 2 minuti na vsaki strani, pri tem rahlo pritisnite, dokler tortilja ni zlato zapečena in zaprta, sir pa popolnoma stopljen. Zunanjost mora biti mestoma hrustljava, vendar še vedno dovolj voljna za čist rez.


  • 5. Pred serviranjem pustite zavitek počivati 1 minuto. Tako se sir umiri in struktura obdrži obliko.

    Zavitek položite na topel krožnik s spojem navzdol in ga postrezite celega ali prerezanega po izraziti diagonali, da se razkrije plasten nadev. Končni krožnik mora pokazati napeto tortiljo, stopljen sir in čisto linijo salse v sredini.
