  • Postupak


  • 1. Mali kalup za pločicu obložite papirom za pečenje, ostavljajući dovoljno viška sa strane da možete lako da izvadite pločicu kada se stegne. Pripremljen kalup držite spremnim pre mešanja fila.


  • 2. U posudi otpornoj na toplotu sjedinite mešavinu mlečnih proteina, hidrolizovani kolagen, glicerol, polidekstozu, ulje od palminih koštica, kakao-maslac i prirodnu aromu. Mešajte silikonskom špatulom 2 do 3 minuta, dok masa ne postane glatka, gusta i ravnomerno hidrirana. Smesa treba da se drži zajedno, bez suvog ili zrnastog izgleda.


  • 3. Umešajte sojine hrskave kuglice kratkim, kontrolisanim pokretima, tek toliko da se ravnomerno rasporede bez drobljenja njihove strukture. Fil treba da ostane kompaktan i blago lepljiv.


  • 4. Čvrsto utisnite fil u pripremljen kalup i poravnajte površinu špatulom. Dobro ga sabijte kako bi se pločica uredno sekla i grizla. Ohladite 15 minuta, dok ne postane čvrsta na dodir.


  • 5. Otopite preliv od mlečne čokolade sa kakao-maslacem na blagoj temperaturi, mešajući dok ne postane potpuno tečan i sjajan. Preliv treba da bude gladak i topao, ne vreo.


  • 6. Izvadite ohlađenu pločicu iz kalupa i stavite je na papir za pečenje. Ravnomerno je obložite čokoladnim prelivom, koristeći špatulu da uklonite višak i napravite tanku, uglađenu ljusku. Ostavite na sobnoj temperaturi 5 minuta, zatim hladite 10 minuta dok se preliv potpuno ne stegne i ne postane blago hrskav.
