  • Postupak



  • 1. Stavite krompir u šerpu, prelijte hladnom vodom da ga prekrije i dovedite do laganog vrenja na srednjoj vatri. Kuvajte 6 do 8 minuta, samo dok ivice ne omekšaju, ali da kocke ostanu cele. Dobro ocedite i rasporedite na pleh da se prosuši od pare 5 minuta.


  • 2. Zagrejte 10 g putera ili ulja u tiganju na srednje jakoj vatri. Dodajte krompir u jednom sloju i pržite 8 do 10 minuta, povremeno okrećući, dok ne postane ravnomerno zlatan i hrskav spolja. Prebacite na topao tanjir i po želji blago začinite, vodeći računa o ravnoteži jela; krompir treba da ostane suv i jasno definisan.


  • 3. Dodajte preostalih 10 g putera ili ulja u isti tiganj. Dodajte luk i kuvajte na srednjoj vatri 6 do 8 minuta, često mešajući, dok ne omekša, postane proziran i blago zlatan po ivicama, bez jakog tamnjenja. Prebacite u malu činiju.


  • 4. Pojačajte vatru na jako. Dodajte kocke goveđeg bifteka u vreo tiganj i zapecite 2 do 3 minuta, okrećući da dobiju boju sa svih strana. Meso treba da bude dobro zapečeno spolja, a i dalje mekano iznutra, sa toplim crvenim središtem ako se služi na klasičan način. Odmah sklonite i ostavite kratko da odmori dok sastavljate tanjir.


  • 5. Umešajte senf u žumance dok smesa ne postane glatka i ujednačena. Neka ostane gusta i sjajna; treba blago da obloži poleđinu kašike i da ostane nekuvana.
