  • Postupak



  • 1. Zagrejte rernu na 250°C i stavite pleh za picu ili pleh za pečenje unutra da se zagreva 10 minuta. Pleh mora biti dovoljno vruć da omogući brzo formiranje donje kore i hrskavu podlogu.


  • 2. Lagano pospite radnu površinu višenamenskim brašnom. Stavite testo za picu na površinu, začinite ga solju i ravnomerno ga razvucite oklagijom u krug prečnika oko 30 cm, tako da sredina bude malo tanja od oboda.


  • 3. Prebacite testo na vruć pleh. Radite brzo kako bi testo ostalo opušteno i lako za oblikovanje.


  • 4. Rasporedite paradajz sos preko testa u tankom, ravnomernom sloju, ostavljajući 1 cm ivice nepokriven. Površina treba da bude premazana, a ne natopljena.


  • 5. Ravnomerno rasporedite mozzarellu preko sosa, pa završite parmezanom. Prelijte maslinovo ulje preko vrha u tankom, ravnomernom mlazu.


  • 6. Pecite 10 do 12 minuta, dok kora na obodu ne postane zlatna, podloga se ne ispeče, a sir se potpuno ne istopi uz blago tamnjenje na pojedinim mestima. Sredina treba da ostane mekana, ali više ne sme biti sirova.


  • 7. Izvadite picu iz rerne i ostavite je da odstoji na plehu 2 minuta pre sečenja. To omogućava da se sir slegne i da parče zadrži uredan oblik.


  • Serviranje i iznošenje


    Poslužite picu celu ili isečenu na 6 jednakih parčadi. Iznesite je na zagrejanoj dasci ili poslužavniku, sa netaknutom korom i sirom ravnomerno raspoređenim do ivice sosa. Završna pica treba da bude uravnotežena: hrskava po obodu, podatna u sredini i prijatno slana u celini.
