  • 20 g ulja za prženje

  • Postupak


  • 1. Isperite beli pirinač u hladnoj vodi dok voda ne postane gotovo bistra. Dobro ocedite. Pomešajte pirinač sa 190 g vode i 2 g soli u šerpi, poklopite i dovedite do ravnomernog laganog ključanja na srednjoj vatri. Smanjite na najnižu temperaturu i kuvajte 12 minuta bez podizanja poklopca. Sklonite sa vatre i ostavite da odstoji, poklopljeno, 10 minuta. Zrna treba da budu mekana, odvojena i suva na površini.


  • 2. U manjoj šerpi prokuvajte vodu, dodajte zeleni grašak i 2 g soli, pa kuvajte 2 do 3 minuta dok ne postane svetlozelen i tek omekša. Odmah ocedite i održavajte toplim. Začinite sa 3 g ulja za prženje i 0.5 g crnog bibera.


  • 3. Zagrejte ulje za prženje u tiganju na srednjoj vatri dok ne dostigne 175°C. Dodajte pohovani prženi pileći kotlet i pržite 2 do 3 minuta sa svake strane, ili dok korica ne postane duboko zlatna i jasno hrskava. Prebacite na poslužavnik obložen papirom, odmah začinite sa 2 g soli i 1 g crnog bibera i ostavite da odstoji 2 minuta. Korica treba da ostane suva, a unutrašnjost potpuno topla.


  • 4. Rastresite pirinač viljuškom i po potrebi lagano začinite preostala 2 g soli. Zrna treba da ostanu cela i ravnomerno začinjena.

    Stavite pirinač u urednu gomilicu na jednu stranu tanjira. Poređajte grašak pored njega u zbijenoj liniji. Postavite kotlet tako da se blago naslanja na pirinač, kako bi korica ostala vidljiva i neoštećena. Poslužite odmah, dok je kotlet hrskav, a pirinač topao i mekan.
