Method


  • 1. Set up the steamer and bring the water to a steady boil over medium-high heat. Lightly grease the cake mold and keep it ready. The steaming environment must be fully established before the batter is mixed.


  • 2. Pass the rice flour and turmeric through a fine sieve into a mixing bowl. Add the sugar and salt. Whisk briefly to distribute the ingredients evenly and prevent streaking in the finished cake.


  • 3. Add the mashed banana and coconut milk to the dry ingredients. Mix with a whisk or spoon for 1 to 2 minutes until the batter is smooth, thick, and evenly yellow-gold. No dry flour should remain, and the mixture should fall from the spoon in a heavy ribbon.


  • 4. Scrape the batter into the prepared mold and level the surface without compacting it. Tap the mold once or twice on the work surface to release large air pockets.


  • 5. Place the mold in the steamer, cover, and steam for 25 minutes over steady medium heat. Do not allow the water to drop below an active simmer. The cake is ready when the surface is set, slightly springy to the touch, and a skewer inserted into the center emerges clean with no wet batter.
