  • 1 gebraaide eier, 50 g

  • Spek, 35 g

  • Gerookte salm, 30 g

  • Aartappel, 80 g, in 'n enkele wig gesny

  • Aarbeikonfyt-doughnut, 50 g

  • Plantaardige olie, 10 g


  • Metode


  • 1. Verhit die oond tot 220°C. Plaas die aartappelwig op 'n klein bakplaat en bedek dit eweredig met 5 g van die plantaardige olie. Rooster vir 15 minute, draai dit een keer halfpad om, totdat die oppervlak diep goudbruin is en die binnekant sag is wanneer dit deurgeprik word.


  • 2. Terwyl die aartappel gaar word, plaas die spek in 'n swaar braaipan oor medium hitte. Kook vir 4 tot 5 minute, draai soos nodig, totdat die vet uitgebraai is en die spek egalig verbruin is met bros rande. Plaas oor na 'n bord met papier uitgevoer en hou warm.


  • 3. Voeg die oorblywende 5 g plantaardige olie by die pan indien nodig, en braai dan die eier oor medium hitte vir 2 tot 3 minute. Die wit moet heeltemal gestol wees, die rande liggies bros, en die eiergeel moet sag bly maar nie so loperig wees dat dit breek wanneer dit oorgeplaas word nie.


  • 4. Maak die gerookte salm net warm deur kontak met die oorblywende hitte van die bord; moenie dit gaarmaak nie. Dit moet soepel, glansend en koel om aan te raak bly.


  • 5. Sny die konfyt-doughnut netjies in die helfte indien nodig vir aanbieding, en hou die vulsel ongeskonde. Dit moet sag bly, met die konfyt sigbaar in die middel en die buitekant nie saamgedruk nie.

    Plaas die aartappelwig effens uit die middel as die anker. Laat die spek daarteen leun, vou die gerookte salm in 'n los lint, en plaas die gebraaide eier met die eiergeel na bo.
