  • 20 g wit kaas

  • 15 g komkommer, in skywe gesny

  • 35 g mini-pienk versierde doughnut met strooisels

  • 40 g mini-pannekoekies

  • 40 g piesang, geskil

  • 27 g groen druiwe

  • 5 g versiersuiker


  • Metode



  • 1. Plaas die hash brown-aartappelkoekie in die pan met 3 g van die botter of olie oor medium hitte. Gaar vir 4 tot 5 minute aan die eerste kant, draai dit dan om en gaar vir 3 tot 4 minute aan die tweede kant. Die oppervlak moet diep goudbruin en bros wees, en die middel deurgaans warm.


  • 2. Voeg die oorblywende 2 g botter of olie by dieselfde pan en verlaag die hitte na laag. Voeg die roereiers by en geur met die sout en swartpeper. Roer aanhoudend vir 2 tot 3 minute totdat die wrongel sag, glansend en net-net gestol is. Verwyder van die hitte terwyl die eiers nog effens los lyk; hulle moet romerig eindig, nie droog nie.


  • 3. Verhit die mini-pannekoekies in die pan vir 30 tot 45 sekondes per kant, net totdat hulle soepel en deurwarm is. Hulle moet bleek bly met ’n ligte, sagte oppervlak.


  • 4. Sny die piesang in egalige stukke. Rangskik die komkommer in netjiese skywe. Hou die druiwe heel. Sny of porsioneer die wit kaas in netjiese stukke indien nodig vir bediening.


  • 5. Plaas die gerookte salm langs die eiers en vou dit liggies eerder as om dit saam te druk. Voeg die hash brown langs die hartige elemente by, en plaas dan die wit kaas en komkommer in ’n aparte, ordelike groep. Rangskik die piesang, druiwe, mini-pannekoekies en mini-pienk versierde doughnut sodat die soet items duidelik apart van die hartige gedeelte bly. Bestrooi die mini-pannekoekies liggies met die versiersuiker.


  • Uitleg en bediening



    Bedien op een groot bord met duidelike skeiding tussen die hartige en soet elemente. Die eiers moet sag bly en sentraal wees aan die hartige kant, met die salm, kaas, komkommer en hash brown wat in gebalanseerde verhouding daarom gerangskik is. Bied die doughnut en pannekoekies aan as ’n afsonderlike soet afronding, met die vrugte netjies geplaas om die samestelling te verlig.
