  • 40 g spek, in klein lardons gesny

  • 5 g olie

  • 120 g eiers

  • 20 g melk

  • 20 g Cheddar-kaas, fyn gerasper

  • Metode


  • 1. Verhit die oond tot 180°C. Smeer 4 holtes van ’n muffinpan met die olie en bedek die bodem en kante eweredig sodat die muffins netjies loskom.

  • 2. Plaas die spek in ’n klein pan oor matige hitte en kook vir 4 tot 5 minute, roer af en toe, totdat die vet uitgesmelt is en die spek liggies verbruin is. Dreineer kortliks op papier en verdeel dit dan eweredig tussen die voorbereide holtes.

  • 3. Klits die eiers, melk, sout en swartpeper in ’n bak net totdat die mengsel glad en egalig is. Moenie dit oorklits nie; die vla moet lig bly.

  • 4. Roer die Cheddar en groen kruie by, gooi dan die mengsel eweredig oor die spek in die muffinholtes en vul elkeen byna tot bo.

  • 5. Bak vir 16 tot 18 minute, totdat die muffins opgepof is, die middelpunte net gestol is en die oppervlak veerkragtig voel met ’n ligte bewing in die middel. Die eiers moet sag wees, nie droog nie.

  • 6. Haal uit die oond en laat vir 3 minute in die pan rus. Keer versigtig uit terwyl dit nog warm is.


  • Uitplasing en bediening


    Sit die muffins warm voor, hetsy direk uit die pan of netjies gerangskik op ’n klein opdienbord. Die voltooide tekstuur moet sag en samehangend wees, met verbruinde spek en gesmelte Cheddar wat op die oppervlak sigbaar is. Bied dit aan as ’n kompakte, hartige happie sonder dat garnering nodig is.
