  • Metode



  • 1. Voer die vorm met bakpapier uit indien nodig en plaas dit op ’n skinkbord vir stabiliteit. Meng die melkproteïen, kollageenhidrolisaat, polidekstrose, versoeter, volmelkpoeier, sout en geurmiddel in ’n klein bak. Meng deeglik totdat die poeiers eenvormig is en geen ligte strepe oorbly nie.


  • 2. Plaas die kakaobotter, palmpitolie en kakaomassa in ’n hittebestande bak oor baie sagte hitte. Roer aanhoudend vir 3 tot 4 minute totdat dit heeltemal gesmelt en glad is, sonder sigbare vaste deeltjies. Die mengsel moet vloeibaar wees maar nie warm nie; verwyder dit sodra dit glansend en egalig word.


  • 3. Giet die vetfase in ’n bestendige straal by die droë mengsel in en vou met ’n spatel totdat ’n digte pasta vorm. Werk dit vir 1 tot 2 minute totdat die massa samehangend, effens klewerig en egalig verdonker is.


  • 4. Vou die gekapte haselneut en sojabros net in totdat dit versprei is. Die tekstuur moet gestruktureerd bly; moenie dit oorwerk nie, anders sal die bros sy definisie verloor.


  • 5. Druk die mengsel stewig in die vorm in en kompakteer dit in lae sodat die oppervlak gelyk word en die hoeke netjies is. Pas bestendige druk vir 30 tot 45 sekondes toe om leemtes uit te skakel en ’n digte, egalige staaf te skep.


  • 6. Verkoel vir 60 minute in die yskas, of totdat dit heeltemal gestol en ferm om aan te raak is. Die staaf moet netjies uit die vorm loskom en ’n skerp rand hou sonder om te verkrummel.


  • Uitleg en bediening



    Haal die staaf uit die vorm en bied dit heel aan op ’n verkoelde bord of ’n plank wat met bakpapier uitgevoer is. Bedien by koel kamertemperatuur, waar die kakaonote oopgaan en die haselneut duidelik afrond, terwyl die binnekant kompak en presies bly.
