Dit is ’n ingetoë vrugtenagereg waarin die peer soepel bly, die appel ’n ligte struktuur behou, en die stroop gedra word deur warm speserye en bruinsuiker. Botter gee aan die afronding ’n stille diepte en rond die vrug af sonder om die helderheid daarvan te versluier. Die gereg moet presies, geurig en gebalanseerd smaak, met elke element onderskeibaar maar volledig verenig.

  • Metode


  • 1. Plaas die water, bruinsuiker, kaneel en kardemom in die kastrol. Sit oor medium hitte en roer net totdat die suiker oplos, ongeveer 1 minuut. Die vloeistof moet geurig en liggies gekleur word, sonder sigbare kristalle.

  • 2. Voeg eers die peerwiggies by, dan die appelwiggies. Bring die vloeistof tot ’n baie sagte prut, verlaag dan die hitte na laag. Bedek met ’n deksel of perkament-cartouche en posjeer vir 10 tot 12 minute, en draai die vrug een keer halfpad deur om. Die vrug moet sag aan die rande wees, maar steeds sy vorm behou.

  • 3. Haal die deksel af en kook verder vir 2 tot 4 minute, sodat die stroop effens verminder en die vrug met ’n glansende lagie bedek. Die vrug moet heeltemal sag wees, maar nie inmekaarsak nie, en die stroop moet liggies aan die lepel kleef.

  • 4. Haal die pan van die hitte af en voeg die botter by. Swaai of roer liggies totdat die botter heeltemal in die stroop geëmulgeer is en die sous glad en satynagtig lyk, ongeveer 30 sekondes.

  • 5. Laat die vrug vir 2 minute in die warm stroop staan voordat dit opgeskep word. Dit laat die geur tot rus kom en die glans egalig oor die vrug set.
