  • Postupak



  • 1. Kratko isperite bijelu rižu pod hladnom vodom dok voda ne postane manje mutna, zatim je dobro ocijedite. Time se uklanja višak površinskog škroba i pomaže da zrna ostanu odvojena.


  • 2. U teškom loncu pomiješajte rižu, vodu i 2 g soli. Zakuhajte na srednje jakoj vatri, zatim odmah smanjite na najnižu vatru, čvrsto poklopite i kuhajte 14 minuta bez miješanja. Maknite s vatre i ostavite da odstoji, poklopljeno, 10 minuta. Riža treba biti mekana, suha na površini i ravnomjerno kuhana.


  • 3. Stavite govedinu u zdjelu s 1 g soli i crnim paprom. Lagano promiješajte tako da začini oblože površinu bez zbijanja mesa.


  • 4. Zagrijte ulje u tavi za pirjanje na srednje jakoj vatri dok ne počne svjetlucati. Dodajte govedinu u jednom sloju i zapecite 4 do 6 minuta, okrećući prema potrebi, dok izvana ne dobije dobru boju i dok se na tavi ne stvori tamni zapečeni talog. Meso ne smije biti nagurano.


  • 5. Dodajte smeđi umak u tavu i smanjite vatru na srednje nisku. Lagano kuhajte 8 do 10 minuta, povremeno miješajući, dok govedina ne omekša, a umak lagano ne obloži meso. Umak treba biti sjajan i reduciran, ne rijedak.


  • 6. Dodajte zeleni grašak riži tijekom posljednje 2 minute odmora, zatim lagano rastresite vilicom tako da se grašak rasporedi bez lomljenja zrna. Riža treba ostati odvojena, a grašak svijetao.


  • 7. Provjerite začinjenost govedine i umaka. Po potrebi prilagodite samo s malim dodatnim prstohvatom soli, pazeći da umak ostane uravnotežen i čistog okusa.
