Taco ini dibangun dengan prinsip kesederhanaan: tortilla jagung hangat, isian daging berbumbu, serta kesegaran bersih dari selada dan tomat, diselesaikan dengan keju dan salsa.   • Tortilla jagung, 90 g

  • Isian daging berbumbu, 120 g

  • Selada, diiris sangat halus, 20 g

  • Tomat, dipotong dadu kecil, 20 g

  • Keju, diparut halus, 20 g

  • Salsa, 30 g


  • Metode


  • 1. Panaskan wajan atau griddle di atas api sedang. Panaskan tortilla jagung selama 20 hingga 30 detik per sisi, hanya sampai lentur dan sedikit harum. Jaga agar tetap hangat dan mudah dilipat; tortilla harus bisa ditekuk tanpa retak.

  • 2. Panaskan isian daging berbumbu dalam wajan sauté kecil di atas api sedang selama 3 hingga 4 menit, aduk sekali atau dua kali, sampai panas merata dan sedikit mengilap. Isian harus lembap, menyatu, dan mengepul, bukan basah.

  • 3. Letakkan tortilla di atas piring saji hangat. Bagi isian daging secara merata di antaranya, dengan porsi tetap di tengah agar taco mempertahankan bentuknya.

  • 4. Tambahkan selada, lalu tomat, lalu keju. Akhiri dengan salsa, sebarkan merata agar memberi bumbu tanpa membanjiri tortilla.

  • 5. Lipat dan sajikan segera. Taco yang sudah jadi harus hangat, seimbang, dan tersusun rapi, dengan tortilla yang tetap lembut dan isian yang tetap jelas terpisah.


  • Penataan dan penyajian


    Susun taco dalam satu baris rapat di atas piring hangat, dalam keadaan terlipat dan sedikit saling bertumpuk. Sajikan segera agar tortilla tetap lentur dan kontras antara isian hangat dan garnish dingin tetap terasa jelas.
