  • Cara membuat


  • 1. Masukkan air, gula merah, mentega, kayu manis, dan kapulaga ke dalam wajan sauté. Panaskan di atas api sedang hingga mendidih perlahan, aduk hanya sampai gula larut dan mentega teremulsi sepenuhnya, sekitar 2 menit. Cairannya harus beraroma rempah yang hangat dan tampak mengilap, bukan berminyak.


  • 2. Tambahkan irisan pir dan apel dalam satu lapisan jika memungkinkan. Tutup dan poach di atas api kecil selama 12 hingga 15 menit, balik buah sekali di pertengahan waktu memasak. Buah harus melunak secara merata, tetap mempertahankan bentuknya, dan mudah ditembus ujung pisau tanpa hancur.


  • 3. Buka tutupnya dan lanjutkan memasak selama 2 hingga 3 menit, sambil menyendoki sirup ke atas buah saat sirup sedikit menyusut. Sirup harus melapisi bagian belakang sendok secara tipis dan menempel sebagai glasir ringan.
