  • Metode



  • 1. Masukkan air, gula cokelat, mentega, kayu manis, dan kapulaga ke dalam panci. Letakkan di atas api sedang dan aduk perlahan selama 1 hingga 2 menit, hanya sampai gula larut dan mentega meleleh menjadi sirup yang halus dan harum.


  • 2. Tambahkan irisan pir dan apel dalam satu lapisan sejauh memungkinkan. Didihkan sangat perlahan, lalu tutup dengan penutup dan masak selama 6 menit.


  • 3. Buka tutupnya dan balik buah dengan hati-hati. Lanjutkan memasak tanpa penutup selama 4 hingga 6 menit, sesekali menyendokkan sirup ke atas buah, sampai irisan empuk tetapi masih mempertahankan bentuknya dan cairannya menyusut menjadi glasir mengilap.


  • 4. Angkat dari api dan diamkan selama 1 menit. Buah harus lembut di bagian tepi, tetap utuh di bagian tengah, dan terlapisi sirup bumbu yang tipis dan berkilau, bukan cairan yang encer.

    Susun irisan pir dan apel dengan rapi dalam mangkuk saji hangat. Sendokkan sirup yang telah menyusut di atas buah agar membentuk lapisan tipis dan merata. Sajikan segera selagi buah masih hangat dan aroma bumbunya tetap terangkat.
