Pasta ini dibina atas kekayaan lembut avokado dan kedalaman hijau segar bayam.   • 10 g minyak zaitun

  • 120 g avokado, dikupas dan dibuang biji

  • 80 g bayam

  • Kaedah


  • 1. Didihkan air dalam periuk sederhana hingga mendidih sepenuhnya. Masukkan pasta dan masak selama 8 hingga 10 minit, atau sehingga lembut tetapi masih sedikit pejal di bahagian tengah. Toskan dengan baik, sambil menyimpan sedikit air rebusan jika perlu untuk mencairkan sos.

  • 2. Sementara pasta dimasak, masukkan bayam ke dalam kuali tumis besar di atas api sederhana. Kacau selama 1 hingga 2 minit, hanya sehingga layu sepenuhnya dan berwarna hijau gelap. Segera pindahkan ke dalam pengisar.

  • 3. Masukkan avokado dan 20 g minyak zaitun ke dalam bayam. Kisar sehingga benar-benar licin dan berwarna hijau pucat, sambil mengikis bahagian tepi jika perlu. Sos sepatutnya pekat, berkilat, dan sekata.

  • 4. Kembalikan pasta yang telah ditoskan ke dalam kuali tumis yang masih suam. Masukkan 10 g minyak zaitun dan gaul sebentar di atas api perlahan selama 30 saat supaya pasta bersalut sekata.

  • 5. Masukkan sos avokado-bayam ke dalam pasta dan gaul perlahan selama 1 minit di atas api perlahan sehingga pasta bersalut sepenuhnya dan sos dipanaskan rata. Jika sos terlalu pekat, cairkan dengan sedikit air rebusan yang disimpan. Pasta yang siap sepatutnya halus berkilau dan melekat ringan pada setiap helaian atau bentuk pasta.


  • Penyajian


    Pusing atau timbun pasta ke dalam mangkuk cetek yang suam, sambil meratakan sos di seluruh permukaan. Hidangkan segera sementara sos masih berkilat dan warnanya masih terang.
