  • Postopek


  • 1. Po potrebi obložite model s papirjem za peko in ga postavite na dosegu roke. Delovna površina naj bo hladna in suha; ploščico je treba oblikovati, preden se maščobe začnejo strjevati.

  • 2. V majhni posodi, odporni na toploto, zmešajte mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, sladilo, polnomastno mleko v prahu, kakav v prahu, sol, aromo in emulgator. Temeljito premešajte, da so praškaste sestavine enakomerno porazdeljene in da ne ostanejo svetle sledi.

  • 6. Za obliv skupaj stopite kakavovo maslo in olje palmovih jedrc pri 45°C do 50°C. Vmešajte kakav v prahu, sladilo, emulgator in sol, dokler ni obliv gladek, sijoč in popolnoma homogen.

  • 7. Ploščico vzemite iz modela in jo položite na papir za peko. Enakomerno jo prelijte oziroma oblecite v obliv, pri tem pa pustite, da odvečni obliv odteče. Obliva mora biti tanka, neprekinjena in strjena s čistim sijajem.

  • 8. Ploščico pustite stati 10 do 15 minut pri hladni sobni temperaturi, dokler obliv ni čvrst in notranjost ob ugrizu rahlo popusti, namesto da bi nudila pastozni odpor.


  • Serviranje in postrežba


    Ploščico postrezite celo na ozkem krožniku ali jo čisto prerežite po diagonali za bolj dodelano predstavitev. Obliva mora ostati nepoškodovana, hrustljava sredica pa naj bo vidna le na odrezanem robu. Postrezite ohlajeno, vendar ne mrzlo, da se tekstura jasno izrazi.
