  • Postopek


  • 1. Pečico segrejte na 220°C. Krompirjev krhelj položite na majhen pekač in ga enakomerno premažite s 5 g rastlinskega olja. Pecite 15 minut in ga na polovici časa enkrat obrnite, da površina postane temno zlato zapečena, notranjost pa mehka, ko jo prebodete.


  • 2. Medtem ko se krompir peče, dajte slanino v težko ponev na srednji temperaturi. Pecite 4 do 5 minut in jo po potrebi obračajte, dokler se maščoba ne izloči in slanina enakomerno ne porjavi s hrustljavimi robovi. Preložite jo na krožnik, obložen s papirjem, in ohranite toplo.


  • 3. Po potrebi v ponev dodajte preostalih 5 g rastlinskega olja, nato pa jajce pecite na srednji temperaturi 2 do 3 minute. Beljak mora biti popolnoma strjen, robovi rahlo hrustljavi, rumenjak pa naj ostane mehak, vendar ne tako tekoč, da bi se pri prenašanju razlil.


  • 4. Dimljeni losos segrejte le s stikom s preostalo toploto krožnika; ne kuhajte ga. Ostati mora voljen, sijoč in hladen na dotik.


  • 5. Krof z marmelado po potrebi za predstavitev čisto prerežite na pol, pri tem pa ohranite nadev nedotaknjen. Ostati mora mehak, z vidno marmelado v sredini in ne stisnjeno zunanjostjo.


  • Serviranje in razporeditev na krožnik


    Krompirjev krhelj postavite rahlo izven sredine kot osrednji element. Ob njem naslonite slanino, dimljeni losos zložite v ohlapen trak in položite ocvrto jajce z rumenjakom navzgor. Zaključite s krofom, postavljenim ločeno od slanih sestavin, tako da se krožnik bere v dveh jasnih gibih: sol in dim, nato sladkost.
