  • Postopek


  • 1. Po potrebi model obložite s papirjem za peko in ga postavite na ravno podlago. Model mora biti suh in pripravljen, preden pripravite zmes.

  • 2. V posodi, odporni na vročino, zmešajte mlečne beljakovine, kolagenski hidrolizat, sladilo, polnomastno mleko v prahu, sojine beljakovine in sol. Mešajte z lopatico, dokler se praškaste sestavine enakomerno ne porazdelijo in ne ostanejo svetlejše sledi.

  • 3. V majhni kozici na zelo nizkem ognju stopite kakavovo maslo skupaj s sončničnim oljem in arašidovim maslom ter neprestano mešajte 2 do 3 minute, dokler zmes ni gladka, sijoča in popolnoma tekoča. Pazite, da se ne zažge.

  • 4. Topli maščobni zmesi dodajte humektant in mešajte, dokler se popolnoma ne vključi. Zmes mora biti enotna in rahlo zgoščena.

  • 5. Toplo tekočo zmes prelijte čez suhe sestavine. Z lopatico prepogibajte in pritiskajte 1 do 2 minuti, dokler ne nastane gosta, povezana pasta. Dodajte sesekljane arašide in mešajte le toliko, da se enakomerno porazdelijo.

  • 6. Zmes prenesite v pripravljen model. Močno in enakomerno jo pritisnite v vse kote, odstranite zračne žepe in ploščico stisnite v kompakten blok. Površino zgladite z lopatico.

  • 7. Hladite 10 minut oziroma dokler ploščica ni čvrsta na dotik in se lepo sprosti iz modela. Končana ploščica mora biti gosta, prožna in se rezati s čistim robom, ne pa drobiti.

    Ploščico vzemite iz modela in jo postrezite celo na ozkem krožniku ali deski, obloženi s papirjem za peko. Za najbolj uravnoteženo teksturo jo postrezite pri hladni sobni temperaturi: čvrsta ob robu, voljna v sredici, z aromo arašidov, ki se odpre najprej, in soljo, ki čisto zaključi pookus.
