  • Postopek


  • 1. Model za 55 g ploščico po potrebi obložite z ozkim trakom papirja za peko, da jo boste lažje čisto odstranili. V majhni skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, polnomastno mleko v prahu, sol in aromo. Temeljito mešajte 30 sekund, dokler se praški enakomerno ne porazdelijo in ne ostanejo svetle proge.


  • 2. V toplotno odporni skledi, postavljeni nad komaj vrelo vodo, skupaj 2 do 3 minute topite kakavovo maslo in olje palmovih jedrc ter mešajte, dokler zmes ni popolnoma tekoča in bistra. Odstavite z ognja, nato vmešajte glicerol in sladilo, da bo zmes gladka in sijoča.


  • 3. Suho mešanico v dveh delih dodajte stopljenim maščobam in po vsakem dodatku odločno premešajte. Mešajte, dokler ne nastane gosta pasta, nato vmešajte sesekljane arašide in sojin hrustljavi dodatek. Masa mora biti povezana, rahlo lepljiva in se ob pritisku držati skupaj.


  • 4. Mešanico čvrsto vtisnite v pripravljen model v enakomerni plasti. Z lopatko jo stisnite, dokler površina ni ravna in robovi kompaktni. Hladite 30 minut oziroma dokler ploščica ni popolnoma strjena in se čisto sprosti iz modela brez deformacije.

    Ploščico vzemite iz modela in jo celo postrezite na ozkem krožniku ali jo zavijte. Površina naj ostane urejena in kompaktna, koščki arašidov pa naj bodo vidni skozi strukturo. Postrezite ohlajeno ali pri hladni sobni temperaturi za najčistejši ugriz in najbolj jasno izraženo teksturo.
