  • 1. Po potrebi obložite model za 55 g ploščico z gladkim trakom papirja za peko. V majhni skledi zmešajte mlečne beljakovine, kolagenski hidrolizat, polidekstrozo, sladilo in sol. Mešajte, dokler praškaste sestavine niso popolnoma enotne in ne ostanejo nobene sledi.


  • 2. V majhni kozici na najnižji temperaturi skupaj stopite kakavovo maslo in olje palmovih jedrc, le toliko, da postaneta tekoča, približno 2 minuti. Odstavite z ognja in vmešajte glicerol, arašidovo maslo in aromo, da zmes postane sijoča in popolnoma povezana.


  • 3. Toplo maščobno mešanico prelijte čez suhe sestavine. S silikonsko lopatico mešajte 1 do 2 minuti, pritiskajte in prepogibajte, dokler ne nastane gosta, povezana pasta. Vmešajte 2 g sesekljanih arašidov. Zmes mora biti voljna, rahlo lepljiva in brez suhih delov.


  • 4. Zmes prenesite v pripravljen model. Trdno in enakomerno jo pritisnite, od enega konca do drugega, da se ploščica stisne brez praznin. Površino zgladite z robom lopatice. Po vrhu potresite preostalih 1.5 g sesekljanih arašidov in jih rahlo pritisnite, da se sprimejo.


  • 5. Hladite 10 do 12 minut, le toliko, da se ploščica strdi in je dovolj čvrsta za lepo jemanje iz modela. Končana ploščica mora ohraniti ostre robove, se rezati brez drobljenja in pri ugrizu ponuditi gost, žvečljiv odpor.


  • Serviranje in postrežba


    Ploščico vzemite iz modela in jo postrezite celo na preprostem krožniku ali jo čisto prerežite po rahli diagonali. Površina mora ostati gladka, zaključek z arašidi viden, ploščica pa oblikovana z disciplino slaščice, ne prigrizka.
